Our makers Cotswold Gold have teamed up with The Blackcurrant Foundation to create a vibrant, tangy, and antioxidant-rich blackcurrant hummus using our award-winning Cotswold Gold extra virgin rapeseed oil. This unique recipe blends creamy chickpeas, juicy blackcurrants, and a zesty hint of lemon, perfect as a healthy snack, dip, or starter.
Why British Blackcurrants?
Grown right here in the UK by passionate farmers, blackcurrants are packed with vitamin C (four times more than oranges by weight), antioxidants, and polyphenols. They’ve been linked to improved brain function, cardiovascular health, and reduced muscle fatigue.
What do you need to make Blackcurrant Hummus?
Serves: 4
Prep Time: 20 minutes
Ingredients:
- 3 tbsp tahini
- 120g blackcurrants
- 2–3 tbsp Cotswold Gold extra virgin rapeseed oil
- Juice of ½ lemon
- 1 tin chickpeas, drained
- 25ml Ribena
- 4 ice cubes
To Garnish:
- Fresh herbs
- Extra blackcurrants
- Salt and pepper
- Drizzle of Cotswold Gold rapeseed oil
How do you make Blackcurrant Hummus?
- Add tahini, blackcurrants, chickpeas, lemon juice, oil, Ribena, and ice cubes to a blender.
- Blend until completely smooth, adding more oil as needed.
- Spoon into a serving bowl.
- Garnish with fresh herbs, blackcurrants, and a drizzle of oil.
- Season to taste and serve.
