Fancy having a go at curing your own salmon? It's a lot easier than you'd think. You don't need to start building yourself a home smoker - everything you need is available in our latest Homemade Curing Kit.
Fish is huge at the moment. We can't get enough of it, whether it's artisanal sushi from Japan, pickled offerings from Scandinavia or good old British fish and chips. Cured salmon is a particular favourite for us, and now you can impress your friends and family by curing your own salmon at home. You don't need any special equipment or a Heston Blumenthal set up - we've got everything you need in The Homemade Curing Kit for Salmon.
The Homemade Curing Kit…Salmon contains:
- 3 x 30g curing salt mixes – Citrus, Dill & Mustard and Sansho Pepper
- 3 x Curing bags: 30cm (Length) x 20cm (Width)
- 6 x Plastic gloves
The new cures include; a Citrus, Dill & Mustard and Sansho Pepper cure. Not only have we focused on traditional fragrances for fish, but we have taken some inspiration from the ever-popular Japanese cuisine with the Sansho Pepper cure which includes Red Chilli, White Sesame, Orange Peel, Black Sesame, Ginger and Nori Seaweed. The process and contents of the kits are the same, you just need to clear a bit of space in your fridge and then add the salmon.
We recommend a visit to your local fishmonger to ensure you get the best and freshest fish possible. Explain that you're planning on curing your own salmon and they should be able to point you in the right direction. Wild salmon is leaner, but farmed salmon contains higher levels of omega 3s and is more affordable. Either will work well with our new curing kit and you will need 500g of salmon fillet for each 30g curing mix. You can cure all three pieces at once, or do them separately - we have included three curing bags.
