This is a great way to cook a whole piece of pork for your family or for a dinner party. Sweet, salty, fruity and spicy pork cooked hot and fast for a tender finish.

Serves: 2
Ingredients:
- 1 x British free range Pork Fillet
- 1 x Ross & Ross Habanero & Pineapple BBQ Jam
- Oil – we use Ross & Ross BBQ Oil
- British Sea Salt
Method:
- Take the meat out of the fridge at least 30 mins before cooking to come to room temperature
- Trim any sinew off the pork
- Light BBQ using British charcoal
- Once lit, place the grates directly over the charcoal to heat. Ideally raise the charcoal to get this close to the grates
- Drizzle with BBQ Oil
- Season well with Sea Salt
- Place over the hot coals and cook for around two minutes each side until they have a nice colour
- Place the BBQ Jam into a saucepan and heat gently on the BBQ whilst the pork is cooking
- Now glaze the pork generously with a brush
- Continue to cook and glaze on all sides for a couple more minutes. Watch it doesn’t burn
- Check the pork, it should still feel a bit soft to touch if you want the pork medium. Cook for longer to your liking
- Move the pork away from the hot coals to rest for 5-10 minutes
- Carve into discs and serve. Season if needed
